One pot chili sin carne

This chili sin carne comes together in just one pot but feeds many mouths. Serve with Mexican-style side dishes.

Ingredients

 0.50 leek
 2 cloves of garlic
 1 bell pepper
 1 red chili
 250 g Beanit® Fava bean chunks (1 packet = 250 g)
 2 tbsp oil
 400 g crushed tomatoes
 1.50 dl water
 400 g bean salsa e.g. GoGreen
 1 dl quinoa
 1 tsp cumin
 1 tsp paprika
 0.50 tsp salt
 0.50 juice of a lime
Serve with:
 0.50 lime cut into wedges
 200 g creme fraiche
 nachos
 fresh coriander

Directions

Slice the leek and bell pepper into strips and mince the garlic and chili. Lightly sauté the vegetables and Beanit® chunks in oil in the pot. Add the crushed tomatoes, water, bean salsa and rinsed quinoa.

Measure the spices into the pot and let it simmer under a lid for approximately 15–20 minutes until the quinoa is cooked. Serve with mashed avocado, creme fraiche and nachos.
